Steak w/ Potato Salad and Blue Cheese Vinaigrette

This is a great, quick steak recipe and one that will quickly satisfy some hunger.  Don’t be fooled by the potato salad part…it is red potatoes on leafs of lettuce.  I can’t tell you how easy this meal is to prepare and no wonder they say this is a “no knife” recipe.  Double the recipe and it makes for a great lunch the following day.  Can’t go wrong with your favorite Cabernet or Zinfandel.




Spiced Beef Stew with Carrots & Mint

This beef dish is incredibly easy to cook (25 min.) and quite healthy and warming.  The cumin, pumpkin spice, and cayenne pepper are an amazing threesome that brings quite a kick to the stew.  Try the stew over couscous, barley, or quinoa.  If you are using grass-fed beef, simply brown the meat in the beginning for 1-2 minutes since the cooking at the end with suffice.  This dish pairs well with a Cabernet Franc.
